
Yes, I know, I know a simple green salad is not earth shattering but we have literally been at home for months and sometimes you just need a little inspo to get you eating more greens! This salad has all the staples but the stand out is the homemade dressing. Look, I know there are so so so many good healthy simple dressings out there but when I make it at home, it is always SO MUCH BETTER!
Ingredients
- Romain Lettuce, chopped
- Cherry tomatoes, cut in half
- Cucumbers, chopped
- Red Onion, chopped
- Mozzarella Cheese, diced
Dressing
- ½ cup plain Greek yogurt (any % fat will do)
- ¼ cup extra-virgin olive oil
- ¼ cup Dijon mustard
- 3 to 4 tablespoons honey
- 2 tablespoons lemon juice
- 2 tablespoons apple cider vinegar
- 1 clove garlic, pressed or minced
- ½ teaspoon fine sea salt
- 10 twists of freshly ground black pepper
