
There are certain things I crave once in a while and THIS IS ONE OF THEM! The salted pork fried rice at one of my favorite Chinese restaurants in Jersey City, Shanghi Best, is TO DIE FOR. It is not your typical fried rice but the flavor is even better and the salted pork is something dreams are made of.
It is super simple and so I didn’t have to keep dishing out endless dollars, I recreated it at home. OMG it is so good and SO easy! Check it out.
Ingredients
- 1 cup white or jasmin rice
- 1 1/4 cups water
- 1/4 cup diced salted cured pork
- 1 tablespoon bacon grease, pork lard or oil (canola is good)
- 1 tablespoon oil
- 1/2 teaspoon minced ginger
- 1/2 lb baby bok chop – finely chopped
- 1-2 Eggs
Directions
- Prepare rice according to directions on package
- When done, sprinkle on the salted pork and add a tablespoon of grease or oil.
- Heat 1 tablespoon of oil in a wok or a pan using medium heat. Add the minced ginger and caramelize a bit. Then add the boy choy, and stir-fry just until wilted. Whisk the eggs and add to the mixture. Cook until well done. Turn off the heat.
- Add the cooked bok choy and egg mixture to the top of the rice, stir and cover again. Let it simmer for 5 minutes. Thats it!
- I add a little additional oil if needed and then also always rice vinegar because I love the tang!
