Easy Greek Orzo Pasta Salad

I LOVE ORZO! It is so underrated and so delicious. As you know, I am not a pasta salad purist and I want you to make this your own! BUT…in the meantime here is how I make mine!

1 box orzo cooked according to package

1 cup cherry tomatoes, halved

1 yellow bell pepper, sliced thinly

1/2 red onion, diced

1 small jar marinated artichoke heards

2 small cucumbers, diced

handful of kalamata olives, halved

4 oz. feta cheese

2 cups chopped fresh spinach

1/4 c. olive oil

2 tablespoons red wine vinegar

juice of 1 lemon

salt and pepper to taste

In a bowl, whisk together olive oil, red wine vinegar, lemon juice and salt and pepper.

In a large salad bowl, combine the cooled orzo and veggies and toss together. Add in feta cheese and dressing and toss again. Serve room temperature and it is usually better the next day!
