The Easiest 3-Ingredient Spinach Artichoke Chicken

Lately, I have found myself spending a lot of time in the kitchen, cooking with just one hand. It seems like whenever I need to prepare a meal, either Finn is sleeping in my arms or Lily is clinging to my leg, asking to be picked up. Needless to say, it can be quite challenging to cook a meal with a little one on your hip! As a result, I have been focusing on simple and quick recipes that don’t require a lot of hands-on time, but still taste delicious. It’s been a fun challenge to come up with creative ways to make dinner, and I’m always on the lookout for new ideas.

Easy + Quick

Last night, I was craving something different for dinner. As I rummaged through my fridge, I noticed that I had a lot of plain grilled chicken left over from meal prep earlier in the week. I wanted to mix things up a bit and make my meal more interesting. That’s when I remembered the jar of Trader Joe’s seasoned artichokes that I had recently purchased. I decided to use them to create a new dish.

So, I started by heating up a saute pan and adding a bunch of spinach and the jar of artichokes to the pan. I let them cook for a few minutes until the spinach had wilted and the artichokes had become soft. Then, I placed the grilled chicken on top of the mixture and let everything cook together for about 10 minutes.

After a few minutes, the flavors of the artichokes and spinach had infused into the chicken, creating a delicious and healthy meal. The dish was so flavorful and tasty that I couldn’t believe it was made with such few ingredients. It satisfied my craving for something different and made for a great meal that I can’t wait to make again.

The easiest dinner you could imagine and it was one of the most delicious.
