
It’s been a week y’all! These are a really quick easy weeknight meal and you can prep it in the morning and heat and eat at night! The part you really need to get right here is the Tuna. It will make or break the dish. So order up some Tonnino and get cookin!

Ingredients
2 Jars Tonnino Tuna – any flavor, drained (honestly, just get it – don’t skimp on Tuna here…this tuna may change your life)
1 orange bell pepper – chopped finely
1/2 red onion chopped finely
2 T fresh dill, chopped
3 T capers
2 eggs
1/2 panko (or more to taste)
1 t mustard (you can omit if you’re not a mustard lover)
Salt
Pepper
For spicy mayo:
Hot Sauce + Mayo – mix to desired spiciness
Directions
Add all the ingredients above (minus the spicy mayo) into a bowl and combine well. Form into small patties (should make about 8). Refrigerate for about 30 minutes or up to a few hours.
Heat pan with really good olive oil and a T of butter.
Cook cakes for about 5 to 7 minutes per side and lay out on a paper towel when finished. Top with spicy mayo and enjoy!
I serve with sauteed spinach and some Near East Cous Cous!

Also, top it off with some Jeni’s for Dessert!
