My Mom’s Famous Heart Shaped Turkey Meatloaf

Now, by NO MEANS do you have to make this heart shaped but whatever, its tradition. Every valentine’s day growing up, my mom made her famous meatloaf but in the shape of a heart. So now that I am all grown up, I do it too! Who wants to go out for V Day (been there done that) when you can sit at home with some of the best comfort food out there.

If you have read my blog in the past, I have totally given up on making mashed potatoes from scratch. There are just too many freaking BETTER things out there already made and you know that if I have a choice between doing things the hard way or the easy way, I chose the easy way. So Bob Evans refrigerated mashed potatoes OR Trader Joe’s Frozen Mashed Potatoes it is.

Ingredients

1 lb ground turkey (you can certainly use ground beef if you want! or any non meat substitution)

1 c seasoned bread crumbs

1/2 c diced yellow onion

1/2 c whole milk

1 large egg beaten

2 T ketchup

1 T Worcestershire sauce

1 tsp dried parsley

3/4 tsp salt

1/2 tsp garlic powder

1/4 tsp.ground black pepper

For the Topping:

1/4 cup ketchup

Instructions

  1. Preheat oven to 350 degrees F
  2. In a large bowl, add the ground turkey, bread crumbs, onion, milk, egg, 2 tablespoons ketchup, worcestershire sauce, parsley, salt, garlic powder, and pepper. Use your hands to mix these together until well combined.
  3. Prepare a baking sheet with foil and olive oil spray or a loaf pan with olive oil spray. Plop the mixture on the baking sheet and shape it to your hearts content (mine is always heart shaped!)
  4. Pour ketchup on top of the turkey meatloaf and spread it into an even layer.
  5. Bake uncovered for 55 minutes.
  6. Let it rest for 8-10 minutes before serving
