I am OBSESSED with the Umami Crunch Salad from Quality Greens in Hoboken. So much so that I have been known to order it sometimes 3 days a week. Being down at the shore for the summer has me missing tons of my favorite restaurants in Hoboken so I decided to recreate the salad for myself. It did NOT disappoint! The key is EXTRA WONTON STRIPS….
Ingredients
- Chopped Romaine
- Roasted Chicken – You can pull this from a rotisserie chicken or you can roast it yourself!
- Shredded Carrots
- Edamame
- Shredded Cabbage
- Wonton Strips
- Ginger Soy Dressing – recipe below.
Easy enough right?
The key is the dressing – which I called and asked what was in it so I think I have it pretty much nailed down.
- Wasabi paste
- Grated Fresh Ginger
- Mayonnaise
- Soy Sauce
- Garlic
- Olive Oil
- Salt
- Pepper
So so so good!
