If you know me, you know I love banana bread. The recipe I am going to share is what my mom has been making ever since I can remember her making BnB. It is soft on the inside, crunchy on the outside and there is no chance I am not eating a slice right out of the oven with a big hunk of butter on it! Husband approved!
Banana Nut Bread
Prep Time: 10-15 mins
Cooking Time: 40mins-1 hr
Makes 1 loaf but the recipe can and SHOULD BE doubled
Ingredients:
1 small ripe bananas (or 2 large)
1/2 c vegetable oil
1 cup sugae
2 eggs
1 1/4 c flour
1 tsp baking soda
1/2 tsp salt
1/2 c chopped walnits
Directions:
Preheat oven to 350 F. Coat one loaf pan with cooking oil spray
Use a blender or a kitchen aid mixer (or mix by hand).
Combine dry ingredients, flour, baking soda and salt into a medium bowl. Set aside. On mixer setting 2, blend the bananas until just lumpy. Add the oil and sugar and blend together. Add eggs and blend. Add dry ingredients and nuts and mix just until all ingredients are blended together.
Pour in loaf pan. Bake at 350 for 40 minutes to an hour or until toothpick or knife inserted into the center comes out clean. Remove from oven and let sit in the pan on a cooking rack for about 5 minutes. Remove from loaf pan and continue on the cooking rack until completely cool. Enjoy with butter!
